It may sound a little odd, using pumpkin, but it tastes so good and just like the fall flavors, it is rich tasting.

Ingredients

  • 1 Tbsp
    canola oil
  • 1 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1/2 c
    chopped yellow bell pepper
  • 1 tsp
    minced garlic
  • 1 lb
    ground turkey breast
  • 1
    14.5 oz can diced tomatoes w/ chiles
  • 2 c
    pumpkin puree
  • 1-1/2 Tbsp
    chili powder
  • ·
    salt and pepper to taste
  • 1/2 c
    reduced-fat shredded mexican-style cheese
  • 1/2 c
    light sour cream

How to Make Harvest pumpkin chili w/ ground turkey

Step-by-Step

  1. Heat oil in lg skillet or soup pot, over medium heat. Saute onions, peppers and garlic until tender.
  2. Add ground turkey and cook until browned. Add tomatoes and pumpkin puree. Stir to combine. Season w/ chili powder, salt and pepper.
  3. Reduce heat to low. Cover, simmer for 20 mins. Top each serving w/ some cheese and a dollop of sour cream.
