Halloween Stuffed Peppers
1 lbground turkey breast
1 clovegarlic, minced
1can diced tomatoes (fire roasted)
2 cbrown rice (minute rice is fine)
2 mediumcelery stalks
1 Tbspolive oil, extra virgin
1/2 cmexican blend shredded cheese
4 largeorange bell peppers
How to Make Halloween Stuffed Peppers
- Pre Heat Oven to 350
- Blend together the garlic and onion in 1 tablespoon of Olive Oil. Add the ground turkey and brown, stirring in the tomatoes, celery. Add brown rice cover and let it cook down in the tomato juices (about 30 minutes)
- While the stuffing mixture is cooking, take a small paring knife clean out the bell peppers of seeds, and carve out faces. Blanche these in boiling water until bright in color. Save the tops.
- Fill each pepper with stuffing from the mix, and top with your favorite cheese blend. Bake for approximately 30 minutes.
