Halloween Stuffed Peppers

I love entertaining and have been planning a dinner party for Halloween. After much searching, I did a trial run prior to the party. I served these over a bed of shredded cheesy potatoes, but am changing it to crunchy shoestring potatoes and onion rings. I think this will achieve the "hay" look I'm trying to capture.

  • 1 lb
    ground turkey breast
  • 1 clove
    garlic, minced
  • 1/2
  • 1
    can diced tomatoes (fire roasted)
  • 2 c
    brown rice (minute rice is fine)
  • 2 medium
    celery stalks
  • 1 Tbsp
    olive oil, extra virgin
  • 1/2 c
    mexican blend shredded cheese
  • 4 large
    orange bell peppers

How to Make Halloween Stuffed Peppers


  1. Pre Heat Oven to 350
  2. Blend together the garlic and onion in 1 tablespoon of Olive Oil. Add the ground turkey and brown, stirring in the tomatoes, celery. Add brown rice cover and let it cook down in the tomato juices (about 30 minutes)
  3. While the stuffing mixture is cooking, take a small paring knife clean out the bell peppers of seeds, and carve out faces. Blanche these in boiling water until bright in color. Save the tops.
  4. Fill each pepper with stuffing from the mix, and top with your favorite cheese blend. Bake for approximately 30 minutes.
