Ingredients For good to the last turkey soup

  • turkey carcuss
  • whatever vegetables you like in soup
  • either noodles or rice.according to amount wanted to finish with
  • i have included some suggestions in directions
  • parsley flakes or fresh if you have it
  • poultry seasoning
  • salt & pepper to taste

How To Make good to the last turkey soup

    Boil the turkey carcass after using what turkey you want for your meal about 40 minutes & the rest of the meat falls from the bone. There may be a quart or more of turkey you didn't realize was there. Cool meat after straining & reserving your liquid for soup base. You may wear plastic gloves with cooled meat & bones to feel for every single bone & put the turkey back into the broth base.(adding more broth, if desired.

    With food processor, either chop or slice vegetables of choice. I used 1/2 onion, 3 stalks celery, 3 carrots, 3 small potatoes, 1 stalk broccoli, 2 cloves garlic, 1 Tbsp. parsley, 1 can butter beans, 1 can corn, salt & pepper to taste & 1 Tbsp poultry seasoning. (use whatever you have on hand or leftover from a meal)

    Cook over medium burner for about 15 min. & either put in rice or noodles to finish off & simmer till tender ( 1/2 hr or so) You can always thicken with gravy leftover if you want. Any leftover soup can be frozen for later use too.
