Not much of a story. I just used what I had on hand.

Ingredients

  • 1 cup torn kale leaves
  • 1/2 - small onion, thinly sliced
  • 1/2 - large tomato, diced
  • 1 - generous handful of corn chips
  • 3/4 cup shredded pepper jack cheese
  • 1 package ground turkey
  • 1 - egg

How To Make gobble loaf

  • Step 1
    Saute onion for one minute. Add kale. Continue until kale is wilted, set aside.
  • Step 2
    Meanwhile, pulse corn chips in a food processor to small pieces. Set aside. Grate cheese in food processor. Also set aside.
  • Step 3
    Add kale/onion to processor bowl with tomato. Pulse several times. Add corn chips, turkey, 1/2 cup of cheese, turkey, salt and pepper to taste. Pulse several times until all ingredients are mixed.
  • Step 4
    Place in oiled baking dish. Sprinkle remaining cheese on top. Bake at 350 for 40 minutes, or until done. Let sit for a few minutes then serve hot.
