Mexican food is a family favorite so I'm always trying to come up with new Tex-Mex ideas. Just using what I had on hand resulted in this casserole. It was super simple to make and everybody loved it.

Ingredients

1 lb
turkey breakfast sausage, browned
1 1/2 c
elbow macaroni, uncooked
1 can(s)
(15.25 oz) fiesta corn, undrained
1
onion, (optional)
1 can(s)
(14.5 oz) petite diced tomatoes, undrained
2 c
salsa
2 c
white tortilla chips, crushed
2 c
cheese, cheddar and pepper jack

How to Make Fiesta Corn Casserole

Step-by-Step

  • 1After browning turkey sausage, drain any excess grease if necessary.

    In a 13"x9" casserole dish, layer ingredients beginning with uncooked elbow noodles. Next add sausage, then corn and onion.
  • 2Stir together tomatoes and salsa. Pour over other ingredients in the pan.
  • 3Cover and bake at 350 degrees for 50 minutes.
  • 4Remove from oven. Uncover and sprinkle tortilla chips over casserole. Cover chips with cheese. Return to oven and bake uncovered for an additional 5 to 10 minutes.
  • 5Note: A four cheese mexican blend would be good in this casserole also.
