fiesta corn casserole

Mexican food is a family favorite so I'm always trying to come up with new Tex-Mex ideas. Just using what I had on hand resulted in this casserole. It was super simple to make and everybody loved it.

Ingredients
- 1 pound turkey breakfast sausage, browned
- 1 1/2 cups elbow macaroni, uncooked
- 1 can (15.25 oz) fiesta corn, undrained
- 1 - onion, (optional)
- 1 can (14.5 oz) petite diced tomatoes, undrained
- 2 cups salsa
- 2 cups white tortilla chips, crushed
- 2 cups cheese, cheddar and pepper jack
How To Make fiesta corn casserole

Step 1After browning turkey sausage, drain any excess grease if necessary. In a 13"x9" casserole dish, layer ingredients beginning with uncooked elbow noodles. Next add sausage, then corn and onion.

Step 2Stir together tomatoes and salsa. Pour over other ingredients in the pan.

Step 3Cover and bake at 350 degrees for 50 minutes.

Step 4Remove from oven. Uncover and sprinkle tortilla chips over casserole. Cover chips with cheese. Return to oven and bake uncovered for an additional 5 to 10 minutes.

Step 5Note: A four cheese mexican blend would be good in this casserole also.
