Ingredients

  • 1 tablespoon olive oil
  • 1-1/2 cup frozen whole kernel corn
  • 1 - 16 oz can pinto beans, drained
  • 1 - 10 oz can diced tomatoes w/ chiles, drained
  • 1 package taco seasoning mix
  • 32 ounces lower-sodium chicken broth
  • 2-1/2 cup chopped, cooked turkey
  • - sour cream for garnish
  • - shredded mexican style cheese for garnish

How To Make easy turkey taco soup

  • Step 1
    Heat oil in lg saucepan over med-high heat. Add corn, cook 3 mins, stirring. Add beans, tomatoes and taco seasoning mix.
  • Step 2
    Add broth. Cover, bring to a boil over high heat. Stir. Add turkey. Reduce heat to medium. Simmer 10 mins, stirring occasionally. Serve w/ sour cream and shredded cheese to top off the soup.
