My dad made this originally w/ ground beef, But I wanted to make it healthier, so added ground turkey instead.

Ingredients

  • 1-1/2 lb
    ground turkey breast
  • 1 large
    onion, diced
  • 1 large
    green bell pepper, diced
  • 1 c
    drained whole kernel corn
  • 1/2 c
    favorite bbq sauce
  • 1 c
    diced tomatoes, drained
  • 2 pkg
    jiffy cornbread mix

How to Make Easy turkey-BBQ casserole

Step-by-Step

  1. Heat oven to 400. Spray a lg baking dish w/ cooking spra. Crumble the ground turkey into a lg skillet over med-high heat. Cook until browned.
  2. Add onion, bell pepper, corn and tomatoes to skillet. Cook, stirring until veggies are tender. Stir in BBQ sauce. Spread the turkey mix into baking dish.
  3. Prepare jiffy mix as directed. Spread batter evenly over turkey mix. Bake 25 min, or until a knife inserted in center comes out clean.
