What could be easier than skillet nachos?
Use ground beef if you want, but to make it healthier, I used ground turkey breast. Taste better to me! Just saying....

Ingredients

  • 1 lb
    ground turkey breast, or ground lean beef
  • 1
    chopped onion
  • 2 c
    spicy picante sauce
  • 1
    15 oz can black beans, drained
  • 1-1/2 tsp
    chili powder
  • 1 large
    tomato, chopped
  • 1/2 c
    black olives, sliced
  • 1 c
    reduced-fat, shredded mexican cheese
  • 1/2 c
    light sour cream
  • 1
    12 oz bag tortilla chips

How to Make Easy skillet nachos

Step-by-Step

  1. In lg skillet, over medium-high heat, brown ground turkey and onions. If using beef, drain fat from skillet.
  2. Add picante sauce, beans and chili powder. Bring to a boil. Reduce heat to low and simmer, uncovered for 5 mins. Stir in tomatoes and olives.
  3. Remove skillet from heat and sprinkle w/ cheese. Spoon sour cream over center of mix. Place chips around the edges of skillet.
