What could be easier than skillet nachos? Use ground beef if you want, but to make it healthier, I used ground turkey breast. Taste better to me! Just saying....

Ingredients

  • 1 pound ground turkey breast, or ground lean beef
  • 1 - chopped onion
  • 2 cups spicy picante sauce
  • 1 - 15 oz can black beans, drained
  • 1-1/2 teaspoon chili powder
  • 1 large tomato, chopped
  • 1/2 cup black olives, sliced
  • 1 cup reduced-fat, shredded mexican cheese
  • 1/2 cup light sour cream
  • 1 - 12 oz bag tortilla chips

How To Make easy skillet nachos

  • Step 1
    In lg skillet, over medium-high heat, brown ground turkey and onions. If using beef, drain fat from skillet.
  • Step 2
    Add picante sauce, beans and chili powder. Bring to a boil. Reduce heat to low and simmer, uncovered for 5 mins. Stir in tomatoes and olives.
  • Step 3
    Remove skillet from heat and sprinkle w/ cheese. Spoon sour cream over center of mix. Place chips around the edges of skillet.
