Most everyone has trouble using up all the left over turkey from a big meal, but this is a delicious way to finish off the last little bits. My sister found this recipe and made it after Thanksgiving one year. It has been on the "Post Turkey Day" menu every year since. Really a Turkey Corn Chowder but lots more tasty.

Ingredients

  • I ALWAYS SAVE THE TURKEY CARCASS WITH ANY BITS OF MEAT ATTACHED AND SIMMER IT WITH A FEW AROMATIC VEGGIES TO MAKE MY OWN BROTH. BUT YOU CAN USE CANNED CHICKEN BROTH IF YOU WISH.

  • 1/4 c
    butter, unsalted
  • 1/4 c
    chopped onion
  • 2 c
    diced raw potato
  • 1 c
    diced celery
  • 2 to 3 c
    home made turkey broth or canned chicken broth
  • 2 1/2 c
    corn, (cream style, or whole kernel, canned, frozen or fresh cut off the cob)
  • 1 tsp
    salt
  • 1/4 tsp
    paprika, sweet mild
  • 1/2 tsp
    ground ginger
  • 2 Tbsp
    chopped parsley
  • 1/8` tsp
    fresh ground pepper
  • 1 LG can(s)
    evaporated milk
  • 1 to 2 c
    chopped leftover cooked turkey
  • ·
    chopped parsley, for garnish
  • IF YOU PREFER A THICKER SOUP, USE EITHER THE SLURRY OR THE ROUX LISTED

  • SLURRY-- PLACE INGREDIENTS IN SMALL LIDDED JAR AND SHAKE WELL TO MIX, ADD WITH SEASONINGS.

  • 1/4 c
    water
  • 2 to 3 Tbsp
    all purpose flour
  • ROUX-- MELT BUTTER IN MICROWAVEABLE DISH, THEN STIR IN FLOUR. MICROWAVE AGAIN FOR 30 SECONDS TO COOK OUT RAW TASTE AND ADD ALONG WITH THE SEASONINGS.

  • 2 to 3 Tbsp
    butter or margarine, melted
  • 2 to 3 Tbsp
    all purpose flour

How to Make Dee's Turkey Continental

Step-by-Step

  1. In a stockpot over medium to medium high heat, melt butter and saute onion, potato and celery (and if using FRESH corn, saute it with these veggies)until the onion and celery are clear and softened 5-7 minutes.
  2. Add the broth and simmer until the potatoes are nearly tender. Potatoes should have some resistance to a fork as they will cook farther with next steps.
  3. Add Corn (if using any other than fresh), all the seasonings, and evaporated milk. Stir well. Whisk in the thickener at this point if desired.
  4. Simmer all together for 15 to 20 minutes. Add chopped turkey and let it heat through.
  5. Taste and adjust seasonings if needed.
  6. Serve with a sprinkle of parsley and a dash of paprika. Great with toasted crusty French bread.
  7. I think this soup tastes better if made early and allow the flavors to meld for a while, but can be eaten right from the pot.
