How to Make BREN'S VEGAN CROCK POT CHILLI (non-vegan Turkey Chilli and stove top versions as well)
- Drain and rinse all beans then place them in the crock pot. Chop the onion into chunks and add to the crock pot. Finely chop the parsley and add it to the crock pot. Add the cans of diced tomatoes (do not drain), and all of the remaining ingredients. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours. Garnish with a little fresh parsley, fresh chopped onions, and serve with a dallop of sour cream and shredded cheddar cheese on the side! YUM. My family and friends love this because it is thick and chunky and they love to scoop it up on the Tostitoes Scoops chips.
- For a non-vegan alternative use 1 package of Jenny-O lean ground turkey. To do this use only 1/2 the packet of McCormic seasoning in the crock pot and reserve the other half for browning the turkey in a pan. Sprinkle the seasoning on the turkey meat then on medium heat drizzle the olive oil in a pan and brown the turkey only 1/2 way. DO NOT fully cook it. Add the partially cooked ground turkey to the crock pot and cook per above instructions.
- To cook on a stove top use a large stock or stewing pot, covered on low heat for 3 to 4 hours, stirring occasionally.
