bird's nest breakfast cups
This is a lightened version of a recipe. It usually has regular bacon and eggs in it. I got this from a Simple & Delicious bonus recipe booklet. I only made one change to add chives instead of parsley. They are so pretty:)

Ingredients
- 12 - turkey bacon strips
- 1 1/2 cups egg beaters
- 6 tablespoons reduced fat mexican cheese blend-or if you are like me add more!
- 1 tablespoon chives, dried
How To Make bird's nest breakfast cups

Step 1Preheat oven to 350. In a lrg skillet, cook bacon over med heat for 2 min on each side, till partially set but not crisp.

Step 2Coat 6 muffin cups with cooking spray; wrap two bacon strips around the inside of each cup.

Step 3Fill each cup with 1/4 cup egg beaters; top with cheese.

Step 4Bake for 18-20 min.; or till eggs are set. Cool for 5 min. before removing from pan. Sprinkle with chives, or parsley. Great for brunches or on-the-go.
