Taco Tuesday! Adjust to your spice level preference by using mild or spicy salsa and increasing or decreasing the chipotles. This can be turned vegan easily and fat free sour cream and fat free tortillas can make a low fat option. A super fresh flavor even meat eaters will love!

Ingredients

  • 8 - flour tortillas
  • 1 tablespoon oil
  • 4 - green onions, finely chopped
  • 4 cloves garlic, minced
  • 2 cans black beans
  • 4 - chipotle peppers in adobo sauce, minced
  • 1 cup salsa
  • 1 cup corn, drained
  • 2 tablespoons fresh lime juice
  • 1/2 cup sour cream
  • 1/2 cup cilantro leaves
  • 2 cups shredded lettuce
  • 1 cup mexican blend shredded cheese
  • To taste - salt and pepper

How To Make spicy vegetarian soft tacos

  • Step 1
    Preheat oven to 400 degrees. Wrap tortillas in foil and put in the oven to warm.
  • Step 2
    In a large saucepan heat oil over medium heat. Saute onions and garlic until fragrant, about 1 minute. Stir in rinsed beans, chipotles and 1 cup water. Bring to a simmer and cook until slightly thickened, about 8 minutes.
  • Step 3
    Add salt and pepper, salsa and corn. Cook until heated through. Top with lime juice.
  • Step 4
    Spread yogurt on tortillas, and top with filling, cilantro, lettuce and cheese. Add extra salsa if desired.
