Ingredients
- 1 jar roasted red bell peppers - equivalen of 2 peppers
- 2 large garlic cloves, pressed
- 2 ounces goat cheese, crumbled (1/2 cup)
- 3/4 cup nonfat cottage cheese
- salt & pepper
- 2 cans 15-oz. cans black beans, drain after heating them
- 8 corn tortillas (or flour if you prefer)
- 1 cup salsa
How To Make red pepper, black bean & goat cheese quesadillas

Step 1In a food processor, chop the garlic and then add the roasted peppers - process to a coarse puree consistency.

Step 2Add the goat cheese and cottage cheese and blend until smooth. Season with the salt and pepper.

Step 3Meanwhile, heat the black beans over medium heat until hot.

Step 4Heat 2 tortillas in a dry skillet until pliable. Spread 2 tbsp. of the mixture over each tortilla; ;leaving a half-inch border. Fold tortilla over and heat through.
