Ingredients For red pepper, black bean & goat cheese quesadillas

  • 1 jar
    roasted red bell peppers - equivalen of 2 peppers
  • 2 lg
    garlic cloves, pressed
  • 2 oz
    goat cheese, crumbled (1/2 cup)
  • 3/4 c
    nonfat cottage cheese
  • salt & pepper
  • 2 can
    15-oz. cans black beans, drain after heating them
  • 8
    corn tortillas (or flour if you prefer)
  • 1 c
    salsa

How To Make red pepper, black bean & goat cheese quesadillas

    In a food processor, chop the garlic and then add the roasted peppers - process to a coarse puree consistency.

    Add the goat cheese and cottage cheese and blend until smooth. Season with the salt and pepper.

    Meanwhile, heat the black beans over medium heat until hot.

    Heat 2 tortillas in a dry skillet until pliable. Spread 2 tbsp. of the mixture over each tortilla; ;leaving a half-inch border. Fold tortilla over and heat through.
