Ingredients

  • 1 jar roasted red bell peppers - equivalen of 2 peppers
  • 2 large garlic cloves, pressed
  • 2 ounces goat cheese, crumbled (1/2 cup)
  • 3/4 cup nonfat cottage cheese
  • salt & pepper
  • 2 cans 15-oz. cans black beans, drain after heating them
  • 8 corn tortillas (or flour if you prefer)
  • 1 cup salsa

How To Make red pepper, black bean & goat cheese quesadillas

  • Step 1
    In a food processor, chop the garlic and then add the roasted peppers - process to a coarse puree consistency.
  • Step 2
    Add the goat cheese and cottage cheese and blend until smooth. Season with the salt and pepper.
  • Step 3
    Meanwhile, heat the black beans over medium heat until hot.
  • Step 4
    Heat 2 tortillas in a dry skillet until pliable. Spread 2 tbsp. of the mixture over each tortilla; ;leaving a half-inch border. Fold tortilla over and heat through.
