I love shrimp tacos and this is my favorite. I hope that you will enjoy this tasty treat. You could easily use charred pineapple or guava instead of the mango.

Ingredients

  • - 4 small white, wheat or corn tortillia (heated, your preference)
  • SALSA
  • - 1 large, ripe, sweet mango, thinly sliced
  • - 1/8 cup sweet red onion, finely chopped
  • - 1/4 fresh habanero, finely minced
  • - 1 lime, juiced
  • - 2 tbsp cilantro, finely chopped
  • - sea salt & fresh ground black pepper (to taste)
  • SHRIMP
  • - 2 tbsp coconut oil
  • - 10 oz large shrimp, peeled and deveined,
  • - sea salt and fresh ground black pepper (to tase)
  • ADDITIONAL TOPPINGS (OPTIONAL)
  • - red bell pepper, thinly sliced
  • - coleslaw (your preference - with or without dressing)
  • - toasted coconut
  • - lime wedges
  • SPICY SAUCE
  • - 3 tbsp mayonnaise
  • - 1 tbsp sirracha sauce
  • - 1 tsp sugar
  • - pinch of sea salt

How To Make my favorite shrimp tacos

  • Step 1
    Salsa For the salsa, mix all the ingredients together. Taste and re-season if necessary. Set aside until needed.
  • Step 2
    Shrimp Put a large pan on medium heat and add coconut oil, once hot add the shrimp and season well with salt and pepper. Cook the prepared shrimp for 3 minutes, (or to your personal preference) then set aside until needed.
  • Step 3
    Additional Toppings Put the optional toppings out for easy assembly.
  • Step 4
    Mayonnaise Sauce In a small bowl, add all the ingredients together and set aside until needed.
  • Step 5
    Assembly Start with tortilla shell, then add coleslaw, red bell peppers, shrimp, salsa, garnish with toasted coconut and drizzle spicy sauce over top, serve with a lime wedge.
