These are simple to make and are perfect for a spur-of-the moment lunch or dinner. I usually keep a couple of pounds of the taco meat frozen, and ready for use. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- THE SPICE MIX
- 4 tablespoons chili powder, hot or mild, your choice
- 2 tablespoons ground cumin
- 1 tablespoon smoked paprika, hot or mild, your choice
- 1 tablespoon dehydrated onion flakes, crushed
- 2 teaspoons kosher salt, fine grind
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon white pepper, freshly ground
- THE TACOS
- 1/4 cup beef stock, or water
- 1 1/2 pounds ground beef
- 4 - 6 ounces corn, fresh off the cob, or frozen
- 10 - 12 tortillas, flour or corn
- ADDITIONAL ITEMS
- cheese, your choice, for garnish
- salsa, your choice, for garnish
- sour cream, for garnish
- refried beans, as a garnish, or as a side
- rice, as a side

Step 2The spice recipe is one that I like use with street tacos. If you have your own favorite, use it in place of this one. In addition, the proportions make enough spice for three of these recipes. Just take the additional spice, and store in a glass container (old spice jar) for the next time.

Step 3The cheese I am using for this recipe is Cotija, also known as Mexican Parmesan.

Step 4Gather your ingredients (mise en place).

Step 5Add the ground beef to a skillet over medium heat, sprinkle with 3 tablespoons of the seasoning mix, and cook until beginning to brown, about 8 – 10 minutes.

Step 6Add the stock or water, and the corn, and stir until most of the liquid has evaporated, and the mixture is heated through, about 5 – 7 minutes.

Step 7PLATE/PRESENT

Step 8Assemble the tacos anyway you choose. My method goes something like this: • Warm flour tortilla • A thin layer of refried beans • A thin layer of sour cream • Taco/corn meat mixture, be generous • A dollop of salsa • Topped with cheese Enjoy
