Easy to make and yummy to eat, if you are leading a keto lifestyle and want something similar to a restaurant's beef enchiladas, this is the dish to make. Serve with avocado, sliced jarred jalapenos, sliced black olives or sour cream, whatever your heart desires.

Ingredients

  • 4 large
    low carb (4 net gms carbs ea) flour tortillas
  • 1 can(s)
    green enchilada sauce
  • 2 Tbsp
    heavy whipping cream
  • 1 lb
    ground beef
  • 1/2 small
    onion, chopped
  • 1/2 pkg
    dry taco seasoning mix
  • 1/4 c
    water
  • 1 small
    can diced mild green chilis
  • 2 c
    shredded cheese, any type

How to Make Keto Green Chili Beef Enchiladas

Step-by-Step

  1. Preheat oven to 350 degrees. Spray 8x8-inch baking dish or 9x9-inch baking dish with nonstick cooking spray.
  2. In a medium bowl, mix enchilada sauce with cream.
  3. In a skillet over medium heat, saute beef and onion until beef is no longer pink; Drain.
  4. Add green chilis and taco seasoning mix and water. Stir and continue to cook until water is absorbed; Remove from heat.
  5. Spoon 1/4 cup sauce on bottom of baking dish and spread with spoon.
  6. Fill each tortilla with 1/4 beef mixture and top with 2 T. cheese.
  7. Place enchiladas in prepared baking dish and top with remainder of the cheese. Bake 20-30 minutes, until bubbly.
