This recipe is always a hit at my house whether it is a large group or just my small family. My kids love this recipe and i have not found anyone yet who doesn't love this meal. This recipe is easy to double, triple with out any sweat.

Ingredients

  • 2 large chicken breast
  • 1 can black beans
  • 1 can pinto beans
  • 2 tablespoons homemade taco seasoning
  • 1 cup water
  • 1 - green pepper
  • 1 - red pepper
  • 1 - yellow pepper
  • 2 - onions
  • - greek yogurt
  • - shredded cheese
  • 2 cans refried beans
  • 2 packages tostadas

How To Make clean eating tacos

  • Step 1
    Combine chicken, beans, water and seasoning in a crock pot and cook on low for 8 hours
  • Step 2
    Last 15 minutes of cooking shred chicken and then put back in crock pot and let cook last 15 minutes
  • Step 3
    While the mixture cooks the last 15 min. you are going to want to saute your onions and peppers. Also cook your refried beans.
  • Step 4
    once all is cooked. You place chicken mixture on tostada top with sauted mixture, Greek yogurt and cheese (Greek yogurt replaces sour cream). Your Refried beans can either go on top or as a side.
