Ingredients
- 5 tablespoons olive oil
- 3 cloves garlic, peeled and crushed
- zest of 2 oranges (finely grated)
- 2 tablespoons honey
- 1 tablespoon dried mint
- 1 1/2 teaspoons ground turmeric
- 3/4 teaspoon salt
- 1 pound (4-6 chops) lamb chops (loin or rib)
- 1 large onion. peeled and sliced

Step 1Mix oil, garlic, orange zest, honey, mint, turmeric, and salt together in a small bowl.

Step 2Place the lamb chops in a single layer in a glass baking dish. Spread marinade over chops and cover with plastic wrap. Marinate in fridge for 2 hours (up to overnight).

Step 3Preheat oven to 400F. Coat an oblong baking dish with nonstick cooking spray. Spread onion slices on bottom of dish and place chops on top.

Step 4Roast for 15-20 minutes, according to how rare you want them.

Step 5Serve immediately.
