Swordfish with Tomatoes, Capers and Mint
1 lbswordfish steaks
·salt and pepper
2 Tbspolive oil
2 clovegarlic, sliced
1 ptcherry tomatoes
1fresh lemon (juice only)
2 Tbspsmall capers, drained
1 Tbspfresh mint, thinly sliced
How to Make Swordfish with Tomatoes, Capers and Mint
- Season swordfish with salt and pepper.
- Heat olive oil in a nonstick skillet, add garlic and cook until aromatic, then remove the garlic from the pan.
- Add the fish to the pan and cook for about 5 minutes on each side, until cooked through. Set fish aside and keep warm.
- Add the cherry tomatoes, lemon juice, capers and mint to the pan and cook until the tomatoes start to soften.
- Serve sauce over fish.
