Ingredients For swordfish with tomatoes, capers and mint

  • 1 lb
    swordfish steaks
  • salt and pepper
  • 2 Tbsp
    olive oil
  • 2 clove
    garlic, sliced
  • 1 pt
    cherry tomatoes
  • 1
    fresh lemon (juice only)
  • 2 Tbsp
    small capers, drained
  • 1 Tbsp
    fresh mint, thinly sliced

How To Make swordfish with tomatoes, capers and mint

    Season swordfish with salt and pepper.

    Heat olive oil in a nonstick skillet, add garlic and cook until aromatic, then remove the garlic from the pan.

    Add the fish to the pan and cook for about 5 minutes on each side, until cooked through. Set fish aside and keep warm.

    Add the cherry tomatoes, lemon juice, capers and mint to the pan and cook until the tomatoes start to soften.
