We love scallops but find them overcooked many times when dining out so rather take a chance I just prepare them home! This is an adaptation of an older, no longer in existence nicer seaside restaurant in Rehoboth Beach, Delaware. It's sad that many of the finer establishments go by the wayside after the original owners pass away. Please note the saute' time is less than 10 minutes and could be between 5 and 10 minutes depending on side of halved scallops.

Ingredients For simply scallops

1 lbsea scallops

1/4 cflour
-
2 Tbspolive oil
-
2 Tbspbutter

1medium tomato, seeded and chopped

1 Tbspfresh parsley, minced

1 Tbspfresh lemon juice

1/4 tspgarlic powder
-
1/4 tspold bay seasoning
How To Make simply scallops

1Pat scallops dry. Cut in half. Dust with flour.

2In skillet over medium, heat olive oil and melt butter. When hot, sauté scallops until all sides are golden brown.

3Add tomatoes, garlic powder and lemon juice. Stir gently.

4Cook until tomatoes are heated through and scallops are tender when fork tested.

5Pour onto serving dish. Sprinkle with fresh parsley. Serve with lemon wedges.
