We love scallops but find them overcooked many times when dining out so rather take a chance I just prepare them home! This is an adaptation of an older, no longer in existence nicer seaside restaurant in Rehoboth Beach, Delaware. It's sad that many of the finer establishments go by the wayside after the original owners pass away. Please note the saute' time is less than 10 minutes and could be between 5 and 10 minutes depending on side of halved scallops.

Ingredients

  • 1 pound sea scallops
  • 1/4 cup flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 - medium tomato, seeded and chopped
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon old bay seasoning

How To Make simply scallops

  • Step 1
    Pat scallops dry. Cut in half. Dust with flour.
  • Step 2
    In skillet over medium, heat olive oil and melt butter. When hot, sauté scallops until all sides are golden brown.
  • Step 3
    Add tomatoes, garlic powder and lemon juice. Stir gently.
  • Step 4
    Cook until tomatoes are heated through and scallops are tender when fork tested.
  • Step 5
    Pour onto serving dish. Sprinkle with fresh parsley. Serve with lemon wedges.
