This is what I had in the house so I made a recipe out of it and it was really good.

Ingredients For shrimp udon

  • 2 Tbsp
    peanut oil
  • 2 tsp
    fresh ginger root, minced
  • 2 clove
    garlic, minced
  • 1 lb
    raw shrimp, peeled and deveined
  • 8 oz
    dry udon noodles (i use a half a pack of wei-chuan organic japanese udon)
  • 1/2
    red bell pepper, sliced into thin strips
  • 1 sm
    carrot, peeled and cut into match-sticks
  • 3
    green onions, cut into 1-1 1/2 inch pieces
  • SAUCE
  • 1/4 c
    soy sauce
  • 2 Tbsp
    sweet chili sauce
  • 1 Tbsp
    brown sugar (well packed)
  • 2 tsp
    dark sesame oil
  • GARNISH
  • thinly sliced green onions

How To Make shrimp udon

  • 1
    Cook Udon according to package directions and rinse under cold water. Set aside
  • 2
    Heat 2 Tbsp. peanut oil in wok over medium high heat.
  • 3
    When oil is heated, add shrimp and cook until it just turns pink.
  • 4
    Add ginger, garlic and vegetables and stir fry two minutes longer.
  • 5
    Add cold udon noodles and sauce.
  • 6
    Toss until heated through.
  • 7
    Plate and serve with a sprinkling of sliced green onion!
