This is what I had in the house so I made a recipe out of it and it was really good.

Ingredients
- 2 tablespoons peanut oil
- 2 teaspoons fresh ginger root, minced
- 2 cloves garlic, minced
- 1 pound raw shrimp, peeled and deveined
- 8 ounces dry udon noodles (i use a half a pack of wei-chuan organic japanese udon)
- 1/2 red bell pepper, sliced into thin strips
- 1 small carrot, peeled and cut into match-sticks
- 3 - green onions, cut into 1-1 1/2 inch pieces
- SAUCE
- 1/4 cup soy sauce
- 2 tablespoons sweet chili sauce
- 1 tablespoon brown sugar (well packed)
- 2 teaspoons dark sesame oil
- GARNISH
- thinly sliced green onions
How To Make shrimp udon

Step 1Cook Udon according to package directions and rinse under cold water. Set aside

Step 2Heat 2 Tbsp. peanut oil in wok over medium high heat.

Step 3When oil is heated, add shrimp and cook until it just turns pink.

Step 4Add ginger, garlic and vegetables and stir fry two minutes longer.

Step 5Add cold udon noodles and sauce.

Step 6Toss until heated through.

Step 7Plate and serve with a sprinkling of sliced green onion!
