This cilantro tomatillo sauce is a great way to showcase shrimp. It goes great with cilantro rice or coconut rice, but plain rice works great too.

Ingredients

  • 1 pound fresh or frozen (thawed) shrimp in shells
  • SAUCE INGREDIENTS
  • 4-5 tomatillos, husked, rinsed well and chopped - approx. 1 cup
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1-2 fresh jalapeno peppers, seeded and finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup lightly packed fresh cilantro sprigs
  • 1/2 cup lightly packed fresh flat-leaf parsley sprigs
  • 3 cups cooked rice (cilantro, coconut or plain)

How To Make shrimp in tomatillo-cilantro sauce

  • Step 1
    Peel fresh (or thawed) shrimp. Rinse shrimp and pat dry - then set aside.
  • Step 2
    In a large skillet, cook chopped tomatillos, onion, garlic and jalapeno peppers in hot oil until onion and peppers are tender. Allow to cool slightly.
  • Step 3
    Place tomatillo mixture in a blender and add chicken broth, cilantro and parlsey. Blend until smooth. Return mixture to the skillet and heat through.
  • Step 4
    In a large skillet, saute shrimp in oil until pink and they form a "C" -- not an "O". Do not overcook the shrimp.
  • Step 5
    Toss cooked shrimp in tomatillo sauce. When serving, spoon shrimp mixture over rice and garnish with cilantro. Served with sliced avocado on the side.
