- 2 cups coconut milk
- 2 pounds medium shrimp, shelled and deveined
- 1 cup water

- 1 cup baby spinach leaves

Step 1In a medium pot, bring coconut milk and water to a boil. Add shrimp. Cook until shrimp just turn pink. Turn off heat.
