quick/easy shrimp with linguini

This recipe is quick and very easy to make. All ingredients are easy to find in any grocery store. I get the shrimp on sale and the rest of the ingredients I pretty much already have. I love the fact that I can make it hot for dinner and eat it cold for lunch the next day. The shrimp is high in proteins and low on calories.

Ingredients

  • 3 tablespoons olive oil, extra virgin or any
  • 2 1/2 tablespoons garlic dried or fresh
  • 8 oz. cans italian whole plum tomatoes
  • 1 pound cooked shelled shrimp
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried or fresh
  • 8 ounces cups feta cheese
  • 1/2 box box linguini
  • dash salt and pepper

How To Make quick/easy shrimp with linguini

  • Step 1
    Boil salted and add a little drip of oil so the pasta doesn’t stick in the pot till pasta is cooked. Follow directions on the box of linguini.
  • Step 2
    Saute and cut onion and garlic in olive oil until tender in a large frying pan 3-5 minutes on med. high heat.
  • Step 3
    Add the cooked shelled shrimp, saute for 2-3 minutes and remove and set aside
  • Step 4
    Add the 8oz. can of tomatoes and include the liquid. Stir, after it starts to boil reduce heat and let simmer. Add the shrimp, oregano, basil and a dash of salt and pepper. Simmer 3-5 minutes.
  • Step 5
    Drain the linguini and put a good amount of the pasta on dish top with the shrimp/tomato sauce and sprinkle feta cheese on top.
  • Step 6
    You can add parmesan for extra cheesey tastes.
