pecan crusted salmon
I was looking for something to do with my wild-caught salmon fillets besides just grill or broil them since I'm watching my weight. I love pecan crusted salmon, but all of the recipes that I found had way more calories and carbs than I wanted. I decided to experiment and I ended up with this delicious recipe that only has 391 calories and 6 net carbs per serving, according to the nutrition calculator that I used. This is so good, you'll think you're cheating, but you're not!

Ingredients
- 1 - 6 ounce boneless skinless salmon filet
- 1 teaspoon mayonnaise
- 1 tablespoon finely chopped pecans
- 1 tablespoon panko bread crumbs
- 1 tablespoon grated parmesan cheese (the kind in the jar is fine).
- 1 teaspoon melted butter
- IF YOU NEED MORE THAN ONE FILLET, SIMPLY ADJUST THE INGREDIENTS FOR THE AMOUNT OF FILLETS YOU WANT TO USE.
How To Make pecan crusted salmon

Step 1Preheat oven to 425 degrees. Line a baking dish with foil and spray with cooking spray.

Step 2Place salmon filet into the baking dish. Spread with mayonnaise.

Step 3In a separate bowl, mix together bread crumbs, pecans, cheese, and melted butter. Press onto the top of the salmon filet.

Step 4Bake for 15 to 20 minutes or until crust is lightly browned and fish flakes easily with fork. Enjoy without guilt!
