On a trip to St. Kitts, we were told about a small local restaurant named Rock Lobster and they had a parmesan crusted grouper dish to die for...well, the advice was spot-on and the meal was over the top! I have recreated this recipe and it is a total winner that will wow any palette.

    grouper filets
  • 1 c
    panko bread crumbs
  • 1 c
    flour
  • 4 Tbsp
    olive oil
  • 1
    egg
  • 1 pinch
    salt
  • 1 pinch
    pepper
  • 1 pinch
    old bay seasoning
  • 1 c
    parmesan cheese shredded
  • 2 pkg
    creamed spinach
  • 8
    cherry tomatoes
  • 2 dash
    balsamic vinaigrette

  • shredded sharp cheddar, Velvetta, Monterey jack, dry mustard, pepper flakes and prepackaged creamed spinach

    Using prepacked cream spinach, the additions are quite easy: 4oz Velvetta, 4oz Monterey Jack, 4oz shredded sharp, 1 tablespoon dry mustard and 1 tablespoon pepper flakes. This will make twice the amount needed, allowing you to save the extra for a side dish for a later meal
  • Grouper filets seasoned with salt, pepper, old bay seasoning and dredged in egg, flour and panko breadcrumbs

    Salt, pepper and season grouper filets with Old Bay seasoning, coat in egg, flour, egg and then panko breading

    While the creamed spinach is resting, pour olive oil in pan and heat to med high while also turning your oven on to 375
  • Grouper filets pan fried for 2 minutes, flipped and coated with shredded parmesan cheese

    Fry the grouper filets for 2 minutes on one side in an oven-capable pan. Flip in pan, and shred the parmesan over each filet
  • Grouper filets in oven for 8 minutes allowing shredded parmesan cheese to crust

    Place grouper filets in oven for 8 minutes
  • Garnish with sliced cherry tomatoes

    Remove filet pan from oven, plate the creamed spinach, lay the grouper filet on top and garnish with sliced cherry tomatoes with dabs of balsamic vinaigrette around the edge of the plate
