  • 1/2 lb
    small frozen cooked shrimp, peeled & thawed
  • 1/2 c
    sun-dried julienned tomatoes, packed in olive oil
  • 1/4 c
    onion, chopped
  • 1/4 c
    fresh mushrooms, sliced
  • 8
    kalamata (greek) olives, sliced
  • 1 c
    broccoli, chopped, cooked

How to Make Mediterranean inspired Shrimp


  1. Heat tomatoes and the oil they come in in a large skillet.
    Add chopped onion and cook until starting to soften. Add mushrooms.
  2. When mushrooms are done, add broccoli and shrimp. Heat until they are warm. Salt and pepper to taste.
  3. Good with rice, or as is.
