I'm trying to cut down on carbs and happened to have all these ingredients on hand.

Ingredients

  • 1/2 pound small frozen cooked shrimp, peeled & thawed
  • 1/2 cup sun-dried julienned tomatoes, packed in olive oil
  • 1/4 cup onion, chopped
  • 1/4 cup fresh mushrooms, sliced
  • 8 - kalamata (greek) olives, sliced
  • 1 cup broccoli, chopped, cooked

How To Make mediterranean inspired shrimp

  • Step 1
    Heat tomatoes and the oil they come in in a large skillet. Add chopped onion and cook until starting to soften. Add mushrooms.
  • Step 2
    When mushrooms are done, add broccoli and shrimp. Heat until they are warm. Salt and pepper to taste.
  • Step 3
    Good with rice, or as is.
