garlicky spiced shrimp brochettes

Super simple but makes the BEST brochettes that you can use a number of ways. Serve them as brochettes, or chill them and serve over a salad. Put them in a taco. Chop them and make a delicious shrimp salad. Can't go wrong! I like these because they won't smoke up when cooking on cast iron - so I don't have to be grilling outside when its 100 degrees on a hot Florida afternoon.

Ingredients

  • 20 large shrimp, peeled and deveined
  • MARINADE:
  • 1/4 cup extra virgin olive oil
  • 1 lemon, zest only
  • 3-4 cloves garlic, finely minced
  • 2 tablespoons flat leaf parsley, minced
  • 3/4 teaspoon oregano
  • 3/4 teaspoon sweet paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes (to taste)

How To Make garlicky spiced shrimp brochettes

  • Step 1
    Peel and devein the shrimp. Pat dry with paper towels. Place in a medium bowl and sprinkle with some kosher salt.
  • Step 2
    Combine all the marinade ingredients. Pour over the shrimp and toss to coat completely. Marinate for 30 minutes.
  • Step 3
    Thread five shrimp on each skewer.
  • Step 4
    You can grill these, but I prefer to "grill" them on my cast iron griddle on my stovetop. It won't take long, maybe 1 1/2 minutes per side - so don't walk away. Turn once. Then remove from grill.
  • Step 5
    Serve immediately. Optionally, serve a wedge of lemon on each plate. Personally, we like them "as is".
