garlicky spiced shrimp brochettes
Super simple but makes the BEST brochettes that you can use a number of ways. Serve them as brochettes, or chill them and serve over a salad. Put them in a taco. Chop them and make a delicious shrimp salad. Can't go wrong! I like these because they won't smoke up when cooking on cast iron - so I don't have to be grilling outside when its 100 degrees on a hot Florida afternoon.

Ingredients
- 20 large shrimp, peeled and deveined
- MARINADE:
- 1/4 cup extra virgin olive oil
- 1 lemon, zest only
- 3-4 cloves garlic, finely minced
- 2 tablespoons flat leaf parsley, minced
- 3/4 teaspoon oregano
- 3/4 teaspoon sweet paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes (to taste)
How To Make garlicky spiced shrimp brochettes

Step 1Peel and devein the shrimp. Pat dry with paper towels. Place in a medium bowl and sprinkle with some kosher salt.

Step 2Combine all the marinade ingredients. Pour over the shrimp and toss to coat completely. Marinate for 30 minutes.

Step 3Thread five shrimp on each skewer.

Step 4You can grill these, but I prefer to "grill" them on my cast iron griddle on my stovetop. It won't take long, maybe 1 1/2 minutes per side - so don't walk away. Turn once. Then remove from grill.

Step 5Serve immediately. Optionally, serve a wedge of lemon on each plate. Personally, we like them "as is".
