Ingredients

  • 1 1/2 tablespoons unsalted butter
  • 1 1/2 tablespoons vegetable oil
  • 1/2 cup minced onion
  • 1/2 cup dry white wine
  • 4 medium ripe tomatoes, peeled, seeded and chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 teaspoon dried oregano
  • 4 ounces feta cheese, crumbled
  • 1 pound raw large shrimp, shelled and deveined
  • 1/4 cup chopped fresh flat-leaf parsley

  • Step 1
    n a heavy skillet, sauté onion in butter and oil over medium-high heat until soft.
  • Step 2
    Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil, lower heat to medium, and simmer until sauce is slightly thickened.
  • Step 3
    Stir in cheese and simmer for 10 to 15 minutes. Adjust seasonings.
  • Step 4
    Just before serving, add shrimp to simmering sauce and cook for 5 minutes or until shrimp are just tender. Do not overcook.
  • Step 5
    Garnish with parsley and serve immediately .
