Ingredients

  • 1 Tbsp
    olive oil
  • 1 small
    fennel bulb, trimmed and thinly sliced (reserve fronds and chop)
  • 2 clove
    garlic, thinly sliced
  • 1/2 c
    orange juice
  • 2 c
    tomatoes, chopped
  • 1/2 tsp
    salt
  • 1 lb
    large shrimp, peeled and deveined

How to Make Fennel & Tomato Shrimp with a Hint of Orange

Step-by-Step

  1. Using a large nonstick skillet, heat the oil until hot. Add the fennel and garlic -- cook until tender, stirring often.
  2. Add the orange juice and bring to a boil until juice is almost absorbed - approx. 4 minutes.
  3. Add the tomatoes and salt to the pan and cook until the sauce is nice and flavored and slightly reduced - approx. 5 min.
  4. Add the shrimp to the pan and cook until just opague - 3 minutes approx. Spoon mixture onto 4 plates and garnish with fennel fronds
