Ingredients
- 1 tablespoon olive oil
- 1 small fennel bulb, trimmed and thinly sliced (reserve fronds and chop)
- 2 cloves garlic, thinly sliced
- 1/2 cup orange juice
- 2 cups tomatoes, chopped
- 1/2 teaspoon salt
- 1 pound large shrimp, peeled and deveined
How To Make fennel & tomato shrimp with a hint of orange

Step 1Using a large nonstick skillet, heat the oil until hot. Add the fennel and garlic -- cook until tender, stirring often.

Step 2Add the orange juice and bring to a boil until juice is almost absorbed - approx. 4 minutes.

Step 3Add the tomatoes and salt to the pan and cook until the sauce is nice and flavored and slightly reduced - approx. 5 min.

Step 4Add the shrimp to the pan and cook until just opague - 3 minutes approx. Spoon mixture onto 4 plates and garnish with fennel fronds
