Ingredients
- 1 pound medium shrimp, peeled and deveined
- 4 tablespoons butter
- 2 medium onions, chopped
- 2 cloves garlic, minced and crushed with a little salt
- 2 cans (14.5 oz. each) diced tomatoes, drained
- 1 teaspoon sugar
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 2 - bay leaves
- 2 teaspoons whole black peppercorns, crushed lightly
- - salt and pepper, to taste

Step 1Saute the onion with butter in a large skillet over medium high heat for about 5 minutes. Add the garlic, tomato, sugar, basil, parsley, bay leaf and peppercorns. Reduce heat to low and cover. Cook for 20 to 25 minutes or until sauce thickens.

Step 2Add shrimp, salt and pepper. Cover and cook for an additional 5 minutes. Remove the bay leaf and discard.
