Quick curry recipe, with rice. From an old community cookbook. You can substitute cream of shrimp soup if you can find it.

Ingredients

  • 1 cup white rice, uncooked
  • 1 tablespoon butter, unsalted
  • 1/2 cup chopped onion
  • 1/2 teaspoon curry powder, or to taste
  • 1 can cream of mushroom soup (10 oz)
  • 1 cup sour cream
  • 1 can shrimp, drained (7 oz)

How To Make curry in a hurry

  • Step 1
    Cook rice according to package instructions.
  • Step 2
    In a large saucepan, over medium heat, melt butter and add onion and curry powder, and simmer until tender.
  • Step 3
    Add soup and stir until smooth. Add sour cream and shrimp and stir until heated through.
  • Step 4
    Serve over hot rice.
  • Step 5
    If desired, garnish with chopped hard-boiled egg, green onion, or bacon bits.
