Quick curry recipe, with rice. From an old community cookbook. You can substitute cream of shrimp soup if you can find it.

Ingredients
- 1 cup white rice, uncooked
- 1 tablespoon butter, unsalted
- 1/2 cup chopped onion
- 1/2 teaspoon curry powder, or to taste
- 1 can cream of mushroom soup (10 oz)
- 1 cup sour cream
- 1 can shrimp, drained (7 oz)
How To Make curry in a hurry

Step 1Cook rice according to package instructions.

Step 2In a large saucepan, over medium heat, melt butter and add onion and curry powder, and simmer until tender.

Step 3Add soup and stir until smooth. Add sour cream and shrimp and stir until heated through.

Step 4Serve over hot rice.

Step 5If desired, garnish with chopped hard-boiled egg, green onion, or bacon bits.
