baby kato's simple lobster pasta
We wanted to have pasta with our lobster but didn't want a heavy sauce. This is what we tried, what a surprise it was; light, flavourful, and delicious. Best of all it was on the table in no time. I used leftover pasta and it worked great in this dish.

Ingredients
- 1/4 cup + 2 tsp butter, divided
- 1/4 cup finely chopped sweet onion
- 1 teaspoon minced garlic
- 2 cups penne pasta, cooked
- 1/4 cup frozen sweet corn
- 3 lobsters, meat coarsely chopped
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper, freshly ground
- 1/8 cup Parmesan cheese, shredded (optional)
- 2 tablespoons chopped parsley, for garnish (optional)
How To Make baby kato's simple lobster pasta

Step 1Add 2 tsp butter in a large frying pan. Add onions and garlic. Fry for 3 - 5 minutes until just starting to caramelize.

Step 2Next, add the rest of the butter to the frying pan. Once it has melted add the pasta into the pan and stir to reheat (about 5 minutes).

Step 3Now add the corn and lobster meat and allow to cook for about 5 minutes more. Take off of heat, taste to see if it is hot enough, and if you need to re-season with salt and pepper.

Step 4Plate and garnish with cheese and parsley.
