spinach pie

This was my Mom's recipe. It is rich and delicious and a real comfort food with all of the benefits of spinach. what more could you want?

Ingredients

  • 1 package pie pastry, prepared top and bottom
  • 3 boxes frozen, chopped spinach, (thawed and drained)
  • 1 tablespoon chopped garlic
  • 8 ounces (or more) shredded cheese
  • 1 - small can black olives chopped
  • 3/4 cup green olives chopped
  • - diced pepperoni, ham, cooked sausage or salami (these are the meats that i have tried, but you can use whatever you like)
  • 3/4 cup parmesan cheese

How To Make spinach pie

  • Step 1
    Place the bottom pie crust in a deep casserole dish.
  • Step 2
    Mix all of the other ingredients in a large bowl and put on top of the pie crust. Top with the second pie crust and seal the edges by pinching together.
  • Step 3
    Cut a few steam holes in the top crust.
  • Step 4
    Bake at 350 degrees for 45 minutes.
