This memorable tart is pretty special, it's; salty, tangy, savory, sweet and rich.

Ingredients

  • 1 pie crust, fresh or frozen, thawed (or 1 sheet thawed puff pastry)
  • 2 slices bacon, cooked crispy, crumbled
  • 2 large sweet onions, thinly sliced
  • 2 tablespoons butter
  • 1 1/2 teaspoons white sugar
  • 1/2 cup creamy roquefort or gorgonzola, crumbled
  • 3 jumbo eggs
  • 1 cup half and half cream
  • 1 tablespoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

How To Make onion tart

  • Step 1
    Preheat oven to 375 F.
  • Step 2
    Place your thinly rolled pie crust or puff pasty in a deep dish pie pan. Bake for 15 minutes and then remove from oven and allow to cool for 15 minutes on a cookie rack.
  • Step 3
    Cook the bacon until crispy, blot away any grease, then crumble and set aside until required.
  • Step 4
    Put a large pan on low heat, add the butter and onions and cook for 20 minutes. Do not allow to burn. Next turn the heat to medium high and add the sugar over the onions. Sauté until the onions turn golden brown. Remove from heat and cool, set aside until required.
  • Step 5
    In a large bowl, add the eggs, half and half, fresh thyme, salt, and pepper. Stir the mixture making sure to blend well.
  • Step 6
    Starting with the caramelized onions; add into the bottom of the pie, smooth out then add the cheese. Now pour the scrambled egg mixture over the onions and cheese.
  • Step 7
    Baked in a preheat oven for 40 minutes or until the eggs are set.
