A rich mushroom and onion pie. Serve with a green salad. No Hobbits were harmed in the making of this recipe.

Ingredients

  • 2 - refrigerated pie crusts, unbaked
  • 3 tablespoons olive oil
  • 1 1/2 pounds button mushrooms, sliced
  • 2 cups finely chopped onion
  • 1/3 cup all purpose flour
  • 1/2 cup stout beer
  • 2 - eggs, beaten
  • 1 1/2 cups grated cheddar cheese, sharp
  • 1 cup cottage cheese, small curd
  • 1/4 cup fresh parsley, chopped
  • - salt and pepper, to taste

How To Make hobbit pie

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Line a 9-inch deep dish pie pan with one crust.
  • Step 3
    Heat oil in large frying pan and saute mushrooms until they start to soften. Add onions and cook over medium heat until onions are translucent.
  • Step 4
    Remove from heat and add flour and beer, mixing well.
  • Step 5
    Add remaining ingredients and season with salt and pepper.
  • Step 6
    Pour in bottom crust and top with second crust. Crimp edges to seal and cut two slits in top to vent.
  • Step 7
    Bake 40-45 minutes, or until crust is golden brown. Let cool a few minutes and slice.
