Betty's Egg and Dairy Free Quiche Filling

·300g (10.5 oz) hard tofu, patted dry
·2/3 cup almond or soy milk
·1 tablespoon nutritional yeast (found in your health food store)
·1 teaspoon minced garlic
·2 teaspoons cornflour (corn starch)
·2 cups of your choice of roasted veggies, left over meats, pan fried bacon etc for the filling)
How to Make Betty's Egg and Dairy Free Quiche Filling
- In a food processor, whizz the tofu, milk, yeast and corn flour until mixture is smooth.
- Pour into a bowl and add the "fillings" you have selected and stir well.
- Pour into your prepared pastry base and bake for 30 minutes in a 200oC oven (400oF). Let cool for 10 minutes and serve.
