betty's egg and dairy free quiche filling

A quiche delicious and surprisingly easy filling for those who have dietary issues and are unable to enjoy a traditional quiche. Use your favourite savoury pastry recipe and fill with this. You can use this to make mini quiches for lunch boxes too. Recipe adapted from "Super Food Ideas" Australia

yield Makes enough to fill a large Quiche (about 8 serves)

Ingredients

  • - 300g (10.5 oz) hard tofu, patted dry
  • - 2/3 cup almond or soy milk
  • - 1 tablespoon nutritional yeast (found in your health food store)
  • - 1 teaspoon minced garlic
  • - 2 teaspoons cornflour (corn starch)
  • - 2 cups of your choice of roasted veggies, left over meats, pan fried bacon etc for the filling)

How To Make betty's egg and dairy free quiche filling

  • Step 1
    In a food processor, whizz the tofu, milk, yeast and corn flour until mixture is smooth.
  • Step 2
    Pour into a bowl and add the "fillings" you have selected and stir well.
  • Step 3
    Pour into your prepared pastry base and bake for 30 minutes in a 200oC oven (400oF). Let cool for 10 minutes and serve.
