This makes a fantastic lunch or dinner. I serve it with a nice vegetable soup and salad for extra greens!

good quality chunk white albacore tuna
finely diced white onion
diced (seeded) cucumber
very finely diced celery
dill pickle relish
chopped, fresh parsley
olive oil mayonnaise
nonfat greek yogurt
sea salt & pepper to taste
spinach leaves (if desired)
sliced tomatoes (if desired)
broccoli slaw (if desired)
whole wheat or high fiber wraps (we use the ole xtreme wellness high fiber low carb tortilla wraps)
How To Make
Drain tuna and empty cans into a small mixing bowl.
Add pickle relish, chopped parsley, celery, onion and cucumber, mayonnaise, Yogurt, paprika, dill, salt & pepper. Mix well. Refrigerate until ready to use.
Line a wrap with spinach leaves, sliced tomato, and sprinkle on some broccoli slaw.
Spoon on tuna mixture.
Fold into a wrap, and slice in half if desired.
