Tasty Tuna Wraps

This makes a fantastic lunch or dinner. I serve it with a nice vegetable soup and salad for extra greens!

Ingredients

  • 3 can
    good quality chunk white albacore tuna
  • 1/2 c
    finely diced white onion
  • 1/4 c
    diced (seeded) cucumber
  • 1/4 c
    very finely diced celery
  • 2 tsp
    dill pickle relish
  • 2 Tbsp
    chopped, fresh parsley
  • 1/4 tsp
    sweet paprika
  • 1/2 tsp
    dried dill
  • 2 Tbsp
    olive oil mayonnaise
  • 2 Tbsp
    nonfat greek yogurt
  • sea salt & pepper to taste
  • spinach leaves (if desired)
  • sliced tomatoes (if desired)
  • broccoli slaw (if desired)
  • whole wheat or high fiber wraps (we use the ole xtreme wellness high fiber low carb tortilla wraps)

How To Make

  • 1
    Drain tuna and empty cans into a small mixing bowl.
  • 2
    Add pickle relish, chopped parsley, celery, onion and cucumber, mayonnaise, Yogurt, paprika, dill, salt & pepper. Mix well. Refrigerate until ready to use.

    Line a wrap with spinach leaves, sliced tomato, and sprinkle on some broccoli slaw.

    Spoon on tuna mixture.
  • 5
    Fold into a wrap, and slice in half if desired.
