I love avocado and yogurt and found this recipe on the back of a yogurt label. I added some herbs and voila!

Ingredients

  • 1/2
    avocado, ripe
  • 3
    eggs, hardboiled
  • 2-3 Tbsp
    plain greek yogurt (fat free is fine)
  • 4 slice
    multi-grain, whole wheat, or rye bread
  • 1/2 c
    spinach leaves
  • 1/2 tsp
    dried herbs of choice (i use mccormick's blend)
  • ·
    salt and pepper, to taste

How to Make Smashed Avocado and Egg Sandwiches

Step-by-Step

  1. In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.
  2. Add salt and pepper to taste.
  3. Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
