smashed avocado and egg sandwiches

I love avocado and yogurt and found this recipe on the back of a yogurt label. I added some herbs and voila!

Ingredients For smashed avocado and egg sandwiches

  • 1/2
    avocado, ripe
  • 3
    eggs, hardboiled
  • 2-3 Tbsp
    plain greek yogurt (fat free is fine)
  • 4 slice
    multi-grain, whole wheat, or rye bread
  • 1/2 c
    spinach leaves
  • 1/2 tsp
    dried herbs of choice (i use mccormick's blend)
  • salt and pepper, to taste

How To Make smashed avocado and egg sandwiches

  • 1
    In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.
  • 2
    Add salt and pepper to taste.
  • 3
    Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
