smashed avocado and egg sandwiches
I love avocado and yogurt and found this recipe on the back of a yogurt label. I added some herbs and voila!

Ingredients
- 1/2 avocado, ripe
- 3 eggs, hardboiled
- 2-3 tablespoons plain greek yogurt (fat free is fine)
- 4 slices multi-grain, whole wheat, or rye bread
- 1/2 cup spinach leaves
- 1/2 teaspoon dried herbs of choice (i use mccormick's blend)
- salt and pepper, to taste
How To Make smashed avocado and egg sandwiches

Step 1In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.

Step 2Add salt and pepper to taste.

Step 3Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
