Smashed Avocado and Egg Sandwiches

Ingredients

1/2avocado, ripe

3eggs, hardboiled

2-3 Tbspplain greek yogurt (fat free is fine)

4 slicemulti-grain, whole wheat, or rye bread
-
1/2 cspinach leaves
-
1/2 tspdried herbs of choice (i use mccormick's blend)

·salt and pepper, to taste
How to Make Smashed Avocado and Egg Sandwiches
- In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.
- Add salt and pepper to taste.
- Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
