I love avocado and yogurt and found this recipe on the back of a yogurt label. I added some herbs and voila!

Ingredients

  • 1/2 avocado, ripe
  • 3 eggs, hardboiled
  • 2-3 tablespoons plain greek yogurt (fat free is fine)
  • 4 slices multi-grain, whole wheat, or rye bread
  • 1/2 cup spinach leaves
  • 1/2 teaspoon dried herbs of choice (i use mccormick's blend)
  • salt and pepper, to taste

How To Make smashed avocado and egg sandwiches

  • Step 1
    In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.
  • Step 2
    Add salt and pepper to taste.
  • Step 3
    Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
