sandwich essentials: yummy croissant tuna toasties
I grew up eating sandwiches akin to this one, and although versions of this recipe are found everywhere, the term “Tuna Toasties” is a very British thing. I have seen them made with chicken, haddock; even beef…One slice of bread, or two…. Cooked up in a skillet, or baked in the oven. I have reconstructed this recipe from memories of the past, and added a few additions from the present. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 medium freshly-baked croissants, or bread, of your choice
- 1 tablespoon sweet butter, unsalted, melted
- 2 slices bacon, your choice
- 1 - 3 tablespoons yellow onion, finely chopped
- 1/2 stalk celery, finely chopped
- 5 ounces albacore tuna, water packed (1 can)
- 1 tablespoon pickle relish, dill variety
- 1 dash hot sauce, i prefer frank’s, or to taste
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste
- 1 tablespoon mayonnaise, plain variety
- 1 tablespoon brown mustard, i prefer grey poupon
- 2 ounces sharp white cheddar cheese, freshly grated

Step 1PREP/PREPARE

Step 2Chef’s Note: These toasties are traditionally served warm; however, they are great wrapped up, and served cold for lunch.

Step 3Gather your Ingredients (mise en place).

Step 4Place a rack in the upper position, and preheat the oven to 350f (175c).

Step 5Cut the croissants in half (lengthwise), and brush 1 tablespoon of the butter on the cut sides.

Step 6Place a skillet over medium heat, and toast the croissants until the cut sides are a golden brown, about 2 – 3 minutes.

Step 7Remove the croissants, from the pan, and add the bacon.

Step 8Slow cook until crisp, then drain on paper towels, and reserve.

Step 9Add the onions to the pan with the bacon grease.

Step 10Stir until softened, about 2 – 3 minutes.

Step 11Add the celery, and cook for an additional 60 seconds.

Step 12Add the tuna to the skillet.

Step 13Break up, and combine with the onions and butter, about 60 seconds.

Step 14Remove the skillet from the heat.

Step 15Whisk together the relish, hot sauce, salt, white pepper, mayonnaise, and brown mustard.

Step 16Add to the pan, and combine with the onions, and tuna.

Step 17Divide between the two croissants, and add the grated cheese on top.

Step 18Place in the preheated oven, and bake until the cheese is nice and melty, about 2 – 3 minutes.

Step 20Add the reserved bacon, and serve while still nice and warm, with some chips or fries. Enjoy.
