sandwich essentials: meatball/mozzarella sub
This is a down-and-dirty way to make a tasty meatball sub. It starts with a quick tomato sauce, assembly, and then a pop under the broiler. It is 30 swift minutes from kitchen to table. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 8 ounces tomato sauce (1 small can)
- 1/4 cup grated parmesan cheese
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1 pinch onion powder, or to taste
- 1 pinch salt, kosher variety, or to taste
- 4 - 6 - homemade meatballs, more on this later
- 1 medium french baguette, freshly baked
- 2 ounces mozzarella cheese, freshly shredded

Step 3Gather your Ingredients (mise en place).

Step 4Add the tomato sauce, grated Parmesan cheese, oregano, basil, onion powder, and vinegar into a small saucepan, over medium heat.

Step 5Bring the sauce up to a light simmer, and then add the meatballs.

Step 6Reduce heat to medium low, cover the saucepan, and allow the meatballs to cook in the sauce at a very light simmer, for 15 – 20 minutes.

Step 7Add a generous portion of sauce to the cut sides of the French baguette.

Step 8Line up the meatballs on the bottom half.

Step 9Cover the meatballs with the mozzarella, and then sprinkle some on the top portion of the baguette.

Step 10Pop under the broiler until the cheese melts, and gets bubbly, about 1 or 2 minutes.

Step 12Cut in half, and serve with some chips, or whatever you fancy at the moment. Enjoy.
