sandwich essentials: down home fish sliders

I had a craving for a fish sandwich; however, I didn’t want to make a spicy, or regional statement… I just wanted a nice tasting fish sandwich, with clean fish taste. In this recipe, I made the fish the star of the show, and not the spices, so choose a good fresh variety of firm white fish. I choose cod. So, you ready… Let’s get into the kitchen.

Ingredients For sandwich essentials: down home fish sliders

  • PLAN/PURCHASE
  • 1/2 lb
    cod filets (or other firm white fish), cut to fit the buns
  • 6 md
    dinner rolls
  • 1/2 c
    flour, all-purpose variety
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • THE BATTER
  • 1 c
    flour, all-purpose variety
  • 1 pinch
    cayenne pepper, or to taste
  • 1 Tbsp
    arrowroot powder
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    garlic powder
  • 6 oz
    club soda
  • ADDITIONAL ITEMS
  • grapeseed oil, or other non-flavored oil, for frying
  • lettuce, for garnish
  • sliced tomato, for garnish
  • tartar sauce, for dressing the buns

How To Make sandwich essentials: down home fish sliders

    PREP/PREPARE

    Gather your Ingredients (mise en place).
  • 3
    Cut the fish to match the size of the buns that you are using.
  • 4
    Chef’s Note: For these sliders, I’m using my homemade yeast rolls.

    Add the 1/2 flour, and some salt and pepper, to a shallow dish.
  • 6
    Add enough oil to a small pan, or pot to come to a depth of 1-inch (3cm), and heat to 350f (175c)

    THE BATTER

    Add all the ingredients for the batter, except the club soda, to a small bowl, and whisk to combine.

    Add the club soda in a steady stream, and mix until combined, but don’t over mix.

    Chef’s Note: A few lumps in the batter is okay; in fact, it’s expected.

    Dredge the fish pieces in the flour, and thoroughly coat.
  • 12
    Shake off the excess, and dip them into the batter.

    Immediately add the battered fish to the hot oil, and repeat for the remainder of the fish.

    Pan fry until they are golden brown, about 2 – 3 minutes per side, and then drain on paper towels.

    Brush a bit of tartar sauce to the bottom half of the rolls.

    Add some lettuce and a thin slice of tomato.

    Add the breaded fish, and top with a bit more tartar sauce.

    Serve while nice and warm with some coleslaw, chips, fries, or whatever you fancy. Enjoy.
