mom's pimento cheese spread
Mom has made this since I was a little girl. Dad loved pimento cheese, but back then it came in little, bitty jars. We couldn't afford it as we were a family of four living on $90 a month. Mom experimented until she came up with a pimento cheese spread. We're on the fifth generation and it is still a favorite. Mom is still getting requests for the recipe. She's happier now...she has it on the computer and prints it out instead of writing it out by hand. She's at her computer everyday looking at what's going on in the world and for new recipes...not bad for a 93 year old!

Ingredients
- 2 lb. boxes velveeta cheese (original), diced into 1-inch pieces
- 2 4-oz. jars diced pimentos
- 1/2 cup sugar
- 5 tablespoons cider vinegar
- 1/2 cup miracle whip (do not substitute)
How To Make mom's pimento cheese spread

Step 1Put all of the above, except the pimentos, in the large bowl of your mixmaster (I used my food processor).

Step 2When you start this begin on the slow speed until all ingredients are mixed.

Step 3Slowly increase speed and then beat on high until the mixture is smooth. If using a food processor, blend for 1-1 1/2 minutes then check to see if smooth.

Step 4Drain juice off of one jar of diced pimentos.

Step 5Add pimentos and remaining juice. Mix just until combined (if you are using a food processor pulse until just combined...you want the pieces of pimento to show up).

Step 6This recipe easily halves...you'll be using only one jar of pimentos, so drain half the juice off of it.

Step 7Store in a covered container in the refrigerator.

Step 8Great to make as sandwiches. Also good on Ritz crackers or as a filling in celery.
