Try this sandwich open-faced for rich and delicious yet refreshing snack. Any heirloom tomatoes will work, but we like brandywine, Cherokee purple, yellow brandywine, or a combination. If enjoying open-faced, simply toasting the bread in a toaster or toaster oven before smearing with mayo will work well. Use whatever mayo you like, but a full-fat mayonnaise works best here. We prefer Duke's.
Ingredients
- 2 slices white bread, sourdough, or brioche
- 1 large heirloom tomato, your choice
- 2 tablespoons mayonnaise
- pinch salt and pepper
How To Make heirloom tomato sandwich

Step 1Preheat a skillet over medium heat. Lightly spread 1 Tbsp of mayonnaise evenly over both sides of each slice of bread.

Step 2Place the bread on the preheated skillet, and toast lightly on each side until lightly golden, about 2 minutes. Remove from the skillet, and set aside.

Step 3Slice the heirloom tomato into thick slabs. Lightly salt and pepper each slice.

Step 4Spread the remaining mayonnaise on both slices of bread, layer the seasoned tomato onto the bread, and top with remining slice of bread. Slice in half and enjoy.
