Crunchy and delicious! We love this stuffed in a pita or just on it's own. We have also made it adding fresh herbs from our garden in the summer for an extra layer of flavors.

Ingredients

  • 12 oz
    poached chicken, diced
  • 1 1/2 c
    chopped celery (about 3 ribs)
  • 1 c
    jicama, chopped (peeled first)
  • 1/2 c
    onion, diced
  • 1/4 tsp
    black pepper
  • 1/8 tsp
    salt
  • 1/2 c
    fat free greek yogurt
  • 1/2
    lemon, juiced

How to Make Guiltless Chicken Salad

Step-by-Step

  1. Combine all ingredients in a large mixing bowl, cover and chill for 30 minutes. Refrigerate for up to four days.
