guiltless chicken salad
Crunchy and delicious! We love this stuffed in a pita or just on it's own. We have also made it adding fresh herbs from our garden in the summer for an extra layer of flavors.

Ingredients
- 12 ounces poached chicken, diced
- 1 1/2 cups chopped celery (about 3 ribs)
- 1 cup jicama, chopped (peeled first)
- 1/2 cup onion, diced
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1/2 cup fat free greek yogurt
- 1/2 - lemon, juiced

Step 1Combine all ingredients in a large mixing bowl, cover and chill for 30 minutes. Refrigerate for up to four days.
