guiltless chicken salad

Crunchy and delicious! We love this stuffed in a pita or just on it's own. We have also made it adding fresh herbs from our garden in the summer for an extra layer of flavors.

Ingredients

  • 12 ounces poached chicken, diced
  • 1 1/2 cups chopped celery (about 3 ribs)
  • 1 cup jicama, chopped (peeled first)
  • 1/2 cup onion, diced
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/2 cup fat free greek yogurt
  • 1/2 - lemon, juiced

How To Make guiltless chicken salad

  • Step 1
    Combine all ingredients in a large mixing bowl, cover and chill for 30 minutes. Refrigerate for up to four days.
