green-fire chicken sandwich

This is an original recipe. It was created for my son who loves chicken breast but has grown a bit tired of the same old, same old chicken sandwich. The combination of ingredient really gave the chicken a "face lift". My family really enjoys it and I can happily serve it because its tip on the healthy side.

Ingredients For green-fire chicken sandwich

  • FOR THE CHICKEN BREAST
  • 4 md
    chicken breast halves, skinless and boneless
  • 1/2 bunch
    cilantro, fresh
  • 3
    basil, fresh leaves
  • 1 tsp
    cumin
  • salt and pepper
  • 1 Tbsp
    olive oil
  • AVOCADO SPREAD
  • 2
    avocados - hass
  • 1/2 sm
    onions, yellow, minced
  • 2 Tbsp
    lime juice
  • salt to taste
  • FOR THE JALAPEñO HOT SPREAD
  • 1
    juajillo dried pepper
  • 1
    jalapeno peppers, fresh
  • 1/2
    onions, yellow, minced
  • 1/4 bunch
    cilantro, fresh
  • 1 tsp
    salt
  • 2 tsp
    vineger white
  • BUILD YOUR GREEN-FIRE CHICKEN SANDWICH
  • 4
    whole wheat kaiser rolls
  • 2 Tbsp
    feta cheese
  • 1
    lettuce head
  • 2 md
    tomato

How To Make green-fire chicken sandwich

    Preparing the chicken breast. Clean and dry each breast. Mince the cilantro, set it aside. Mix the rest of the ingredients add the mince cilantro to the green mixture. Smother the chicken breast with the mixture. Let rest for a few mins. Once you have the avocado spread and the hot sauce, grill the chicken breast to internal temp. to 160 degrees. It will continue to cook, by the time its on the bun, it will be 165 degrees. Don't over cook to keep some of the juices from the chicken breast.

    For the avocado spread. Cut the avocado in half, with a spoon remove the flesh into a med size bowl. Add the minced onions, lime and salt. Mash it all together to create a spread. It does not need to be perfectly creamy. If it's a bit chunky, it'll be just fine. Adjust the lime and salt as needed. Refrigerate until ready to use.

    For the hot sauce. Cut the guajillo pepper into small pieces, keep all seeds, put them into a small bowl. Add enough water to cover the pepper. Should be about 2-3 oz. let rest for 10 mins. Mean while, puree jalapeño, onion, cilantro, salt and vinegar. Add the guajillo, puree until pastee. Caution, this will be spicy if not used to eating spicy foods.

    Before you build your sandwich. cut a two leaves of lettuce per sandwich. Cut the tomato in slices.

    Creating your Green Fire chicken Sandwich. If you like, briefly warm the kaiser bun on the grill. Once ready, cut the bun in half, spread some avocado spread on the bottom, topped with feta cheese, next come the fully cooked chicken breast, then spread some of your hot sauce on top, next one or two leave of lettuce, next two tomato slices finally, spread some more avocado spread on the top bun. Close that baby up and enjoy.
