Greek Chick Pea Pita Filling and Yogurt Sauce

This is a vegetarian stuffing for pita bread. It would also be delicious on a roll, bun, or sandwich. You could even enjoy it as a side salad, but a pita is more fun. For those who just have to have meat with their meal, grilled chicken is especially good for this. Just chop it into bite-sized piece and combine with the chick pea stuffing.

  • 1
    kirby cucumber, cut into small dice
  • 1/2 c
    cherry tomatoes, halved
  • 1 Tbsp
    capers, coarsely chopped, if desired
  • 1 c
    cooked chick peas (1/2 a can)
  • 1 Tbsp
    chopped fresh dill, or to taste

  • 1/3 c
    greek yogurt
  • 3 oz
    feta cheese, crumbled
  • 1 tsp
    cider vinegar
  • 1-2
    peperoncini, minced

How to Make Greek Chick Pea Pita Filling and Yogurt Sauce


  1. In a bowl, combine the stuffing ingredients and toss to combine.
  2. In another bowl, stir together the sauce ingredients.
  3. To serve: Cut each pita in half and gently open up each side to form a pocket. Fill each with about 1/4 cup of stuffing (or more). Spoon a couple of tablespoons of sauce on the filling and enjoy.
