This is a vegetarian stuffing for pita bread. It would also be delicious on a roll, bun, or sandwich. You could even enjoy it as a side salad, but a pita is more fun. For those who just have to have meat with their meal, grilled chicken is especially good for this. Just chop it into bite-sized piece and combine with the chick pea stuffing.

Ingredients

  • CHICK PEA AND VEGETABLE STUFFING
  • 1 - kirby cucumber, cut into small dice
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon capers, coarsely chopped, if desired
  • 1 cup cooked chick peas (1/2 a can)
  • 1 tablespoon chopped fresh dill, or to taste
  • FETA YOGURT SAUCE
  • 1/3 cup greek yogurt
  • 3 ounces feta cheese, crumbled
  • 1 teaspoon cider vinegar
  • 1-2 - peperoncini, minced

How To Make greek chick pea pita filling and yogurt sauce

  • Step 1
    In a bowl, combine the stuffing ingredients and toss to combine.
  • Step 2
    In another bowl, stir together the sauce ingredients.
  • Step 3
    To serve: Cut each pita in half and gently open up each side to form a pocket. Fill each with about 1/4 cup of stuffing (or more). Spoon a couple of tablespoons of sauce on the filling and enjoy.
