I have been craving a fish sandwich for a long time. But, I did not want the typical “fried” fish variety, but something more akin to a po’ boy. This is not exactly what I would call a “po’ boy,” but it is fairly close. For one, there are no Cajun spices, and I am using cod; as opposed to a more traditional shrimp. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE DRESSING
  • 2 slices bacon
  • 2 ounces cream cheese, room temperature
  • 1 tablespoon mayonnaise, plain variety
  • 2 teaspoons lemon juice, freshly squeezed
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon capers, smashed
  • 1/2 teaspoon hungarian paprika
  • 1 clove baked garlic, smashed
  • - salt, kosher variety, to taste
  • - white pepper, freshly ground, to taste
  • THE COD
  • - the sauté pan with the bacon grease
  • 6 ounces cod filet
  • ADDITIONAL ITEMS
  • - butter-toasted brioche roll
  • - sliced tomatoes
  • - parmesan cheese, for topping

How To Make fish essentials: comfy cod sammie

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    THE DRESSING
  • Step 4
    Cook the bacon in a sauté pan over medium heat, until crisp.
  • Step 5
    Remove the bacon, and chop. Leave the bacon grease in the pan. We will need that later.
  • Step 6
    Combine all the ingredients (including the bacon) for the dressing together in a bowl, and then salt and pepper, to taste.

    THE COD

    Take the sauté pan with the bacon grease, and place over medium-low heat.
  • Step 9
    Sprinkle the cod with some salt and pepper, and add to the pan.
  • Step 10
    Sauté, turning occasionally, until the cod is cooked through, and begins to flake.

    Allow the cod to cool to room temperature, flake, and gently toss with the dressing.

    Add some lettuce to the bottom of a toasted bun.
  • Step 13
    Add some fresh tomatoes.

    Add the cod mix.

    My favorite way to serve this is on a butter-toasted brioche roll, with some freshly-sliced tomatoes, tipped with a bit of parmesan cheese, and chips on the side. Enjoy.
