A Maltese version of egg salad.

Ingredients

  • 1 - baguette, sliced in half lengthwise, ends removed, lightly toasted
  • 2 tablespoons mayonnaise
  • - mixed greens
  • 1/2 - avocado, pitted, skinned, thinly sliced
  • 3 - hard boiled eggs, shelled and sliced
  • - salt and pepper, to taste
  • - red onion, thinly sliced, for garnish
  • - gherkins, thinly sliced, for garnish

How To Make egg salad sandwich

  • Step 1
    Spread mayonnaise onto both baguette halves.
  • Step 2
    Top with mixed greens, avocado slices and egg slices. Season with salt and pepper.
  • Step 3
    Top eggs with a small amount of red onions, micro greens and gherkins.
  • Step 4
    Top sandwiches with baguette tops, gently pressing together and serve.
