Ingredients
- 1 - baguette, sliced in half lengthwise, ends removed, lightly toasted
- 2 tablespoons mayonnaise
- - mixed greens
- 1/2 - avocado, pitted, skinned, thinly sliced
- 3 - hard boiled eggs, shelled and sliced
- - salt and pepper, to taste
- - red onion, thinly sliced, for garnish
- - gherkins, thinly sliced, for garnish
How To Make egg salad sandwich

Step 1Spread mayonnaise onto both baguette halves.

Step 2Top with mixed greens, avocado slices and egg slices. Season with salt and pepper.

Step 3Top eggs with a small amount of red onions, micro greens and gherkins.

Step 4Top sandwiches with baguette tops, gently pressing together and serve.
