This will be one of the tastiest curry chicken salad mixtures you have ever had. Full of flavor and texture, this is tasty on its own, with crackers, as a sandwich, or scooped over a bed of greens. Be careful....it's addicting!

Ingredients

  • 3 cups grilled chicken breast, seasoned and diced
  • 1/4 cup golden raisins
  • 1/4 cup almonds, slivered
  • 1/4 cup celery, diced
  • 1/4 cup gala apple, diced
  • 3 tablespoons scallions, chopped
  • 1 cup mayonnaise
  • 1/4 cup honey
  • 1 1/2 tablespoons curry powder
  • dash salt and pepper

How To Make curry chicken salad sandwich

  • Step 1
    Season chicken breast as you like, grill, let cool, dice, and add to medium mixing bowl.
  • Step 2
    Add raisins, almonds, celery and apple.
  • Step 3
    In a separate bowl, mix together the mayo, honey, curry, salt and pepper.
  • Step 4
    Add to the chicken bowl and toss to coat evenly.
  • Step 5
    Serve on bread, or atop a bed of greens for a salad.
