This will be one of the tastiest curry chicken salad mixtures you have ever had. Full of flavor and texture, this is tasty on its own, with crackers, as a sandwich, or scooped over a bed of greens. Be careful....it's addicting!

Ingredients

  • 3 c
    grilled chicken breast, seasoned and diced
  • 1/4 c
    golden raisins
  • 1/4 c
    almonds, slivered
  • 1/4 c
    celery, diced
  • 1/4 c
    gala apple, diced
  • 3 Tbsp
    scallions, chopped
  • 1 c
    mayonnaise
  • 1/4 c
    honey
  • 1 1/2 Tbsp
    curry powder
  • dash(es)
    salt and pepper

How to Make Curry chicken salad sandwich

Step-by-Step

  1. Season chicken breast as you like, grill, let cool, dice, and add to medium mixing bowl.
  2. Add raisins, almonds, celery and apple.
  3. In a separate bowl, mix together the mayo, honey, curry, salt and pepper.
  4. Add to the chicken bowl and toss to coat evenly.
  5. Serve on bread, or atop a bed of greens for a salad.
